We source 100% grass-fed, grass-finished kidney suet from small farms in Portugal and Spain, where cattle graze on pasture 365 days a year.

And just because it’s pasture-raised doesn’t mean it’s grass-finished.

Ours is all three — and we only use kidney fat (suet), the cleanest and most nutrient-rich fat from the animal. We trim it by hand to reduce odor and ensure purity.
Why it matters:
Most tallow products use low-grade body fat from unknown sources, often processed in bulk and stripped of nutrients. We start with the best — and keep it that way.
2. Rendered and Crafted In-House
We don’t outsource our production or buy pre-processed tallow.
We render everything ourselves, in small batches, right here in Algarve, Portugal.
This gives us full control over:

We use traditional, low-heat methods to preserve nutrients and avoid the strong smell that poorly rendered tallow can have.
